A refined washed Maragogype from Finca Timbuyacu in San Nicolas, Rodríguez de Mendoza, Peru. Produced by Alfonso Tejada Iberico and Karim Rosario Araoz Grandez, it offers bright tropical fruit and stone-fruit character with a rounded brown sugar sweetness. Clean, balanced and easy to work with in fast-paced service.

Finca Timbuyacu operates as a model farm, sharing practical training with neighbouring producers on farm management, harvesting, fermentation, washing and drying. This focus on precision and consistency shows in the cup, giving dependable quality across brews.

The lot is 100% Maragogype — a large-bean Typica mutation valued for clarity and nuance. Cherries are selectively handpicked, pulped in a drum, fermented for 192 hours, fully washed, then dried on beds and patios over 15–20 days. Parchment is rested before milling to stabilise flavour.

Timbuyacu placed 12th in Peru’s Cup of Excellence in 2017. The farm also dedicates 38 of its 68 hectares to forest preserves that protect native biodiversity and safeguard on-farm water sources.
