Best for. Specialty cafés running ~200–400 milk drinks a day with a head barista who wants paddle pre-infusion and fine PID control. Sustained throughput is the PB's strength: saturated groups stay thermally stable through peaks, and the dual PID lets you dial brew temperature without compromising steam pressure. Strong fit for the second machine in a small group, or the first big machine for a single high-volume site.

Workflow notes. The paddle is the defining feature. It gives baristas explicit control over pre-infusion length, useful for light-roast specialty filter-style espresso programmes and for managing channelling on tough origins. Auto-volumetric mode (AV) is available if you prefer set-and-forget for service. Steam boiler is generously sized for a 2-group; recovery through high milk-drink runs is rarely the bottleneck.
