A clean, fruit-led Ethiopian espresso from Guji, roasted light for clarity and balance. Expect bright, tangy acidity with a syrupy sweetness and a composed finish that holds well both neat and in milk.
This Special Prep Grade 1 lot is processed at the Bishan Wate Washing Station near the Wate River, where cherry from around 50 smallholders is delivered at peak ripeness. After flotation to remove defects, the coffee is depulped and wet-fermented for 48 hours, then fully washed and dried slowly on raised beds for around 21 days to a stable moisture level. The station separates limited day-lots and keeps this preparation distinct, supporting a consistently clean cup and precise flavour expression.
Guji’s high-altitude, red-soil landscape shapes this profile with refined fruit character and sweetness. In service, it extracts reliably for a modern espresso: juicy and articulate as a black coffee, with enough depth and sweetness to cut through milk.
