Best for. High-volume cafés where milk drinks dominate. Typically once daily volume is above ~400 drinks and peak-hour throughput is the real constraint. The KB90 is the machine LM designed specifically for that workflow. Independent saturated brew boilers per group mean a busy second barista doesn't disturb the first's shots; Straight-In and Steam Flush cut seconds off every cycle. If you're already running a PB at maximum and queuing, this is the upgrade path.

Workflow notes. The Straight-In portafilter drops into the group head without rotation: quicker for a busy barista, easier on wrists across long shifts, and the lockout is engineered for the higher mechanical demand of high-volume operation. Steam Flush (manual or automatic) sends a burst of steam followed by a hot-water rinse through the brew path between shots, keeping the group clean and consistent during peaks. Drip Prediction with built-in precision scales is useful in trained-barista environments where shot weight is part of the recipe; less so if the team isn't measuring. Pair with a grinder that won't bottleneck the workflow. For a KB90 that usually means an E80 or twin-grinder setup.
